Tasting
Nose
The bouquet is immediately striking for its warm and reassuring sweetness. The first floral and mineral notes quickly open up to aromas of vine peach, citron, calisson, and mocha.
Palate
The fullness settles in the mouth, contained and tender at its core. The thick texture becomes firmer and the complexity gradually increases with saline nuances. The finish is distinguished by an exquisite bitterness and a glorious maturity with flavors of dried fruit, cocoa, and roasted hazelnut.
Food and wine pairings
This champagne pairs perfectly with refined dishes such as seafood, noble fish, white meats in sauce, and mature cheeses.
Service and storage
Serve at a temperature of 10-12°C. To be drunk by around 2030 to fully appreciate its evolution and complexity.

The property
The Dom Pérignon Champagne House pays tribute to Dom Pierre Pérignon, the famous monk of the Abbey of Hautvillers, who was appointed cellar master in 1668. For nearly fifty years, he worked passionately to create what he called the "best wine in the world". Today, Dom Pérignon continues this quest for excellence and harmony, guided by Vincent Chaperon, Cellar Master since 2019.
The vineyard
Dom Pérignon champagne is made exclusively from grapes from great Champagne terroirs. The vine benefits from meticulous attention and sustainable viticulture, ensuring the exceptional quality of the grapes.
The vintage
The 2006 vintage is marked by a contrasting climate in Champagne. A hot and dry summer with a scorching July followed by an unusually cool and wet August. September, with its almost summer-like character, was decisive in providing exceptional maturity to the grapes. The harvest began on September 11 and spread over nearly three weeks, allowing the grapes to develop aromatic richness and great complexity.
Vinification and aging
In its P2 version, the 2006 vintage benefits from a second life, a second expression coinciding with the peak of its vitality.
This vintage has benefited from a long aging of 17 years in the cellar, from 2006 to 2023, allowing the aromas to fully develop and the wine to reach an optimal expression.
