Tasting
Color
The color of the wine presents a magnificent golden yellow, enhanced by brilliant shining reflections.
Nose
On the nose, this champagne reveals a complex and refined nose, mixing notes of malted cereals, pastries and mandarin flesh. As the wine breathes, delicious notes of roasted coffee bean, toasted bread, vanilla pod and blond tobacco also unfold.
Palate
The ample and expressive palate seduces with its exotic and gourmet flavors (chocolate orangettes, licorice stick, cedar wood, blueberries, apricot brandy, lemon liqueur), supported by a mineral and chalky finish of great elegance.
Service and aging
Serve between 12° and 14°C. This cuvée can wait in cellars for about 10 years.
Food and wine pairings
A wild Turbot ‘’ikejime’’ with Burmese coffee or a fine tartlet with roasted Ceps are refined pairings with this vintage champagne.

The property
Since its creation in 1818 by the spouses Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.
The vineyard
The vineyard of Maison Billecart-Salmon extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way in order to approach an authentic fruit and reflect the quality of the Champagne terroir.
The cuvée
Coming from a one-hectare plot of old vines planted in 1964, this Blanc de Noirs meets particularly demanding standards: it is a single plot, enclosed and in one piece.
Vinification and aging
This vintage champagne 2009 benefits from a full vinification in barrels, a choice that gives it remarkable complexity and structure. Maturation on lees extends over a period of nearly 13 years and the dosage is 2 g/l.
