A typical Sicilian wine produced through organic viticulture and biodynamism

The estate

The COS estate was founded in 1980 by three friends and wine enthusiasts who were then studying architecture and medicine. Originally from the Vittoria province in Italy, they purchased a former estate, making them the youngest winegrowers in the region. Today, COS is one of the most influential producers in Sicily, even Italy. Giusto Occhipinti is an iconic figure from COS who, with his partner, Giambattista Cilia, became interested in one wine in particular: Cerasuolo di Vittoria, an Italian wine produced from a blend of Nero d’Avola and Frappato.

The vineyard

The vineyard covers 37 hectares which lie at between 230 and 270 metres of altitude. Sirocco winds, as well as those from the Hyblaean mountains, sweep through this exceptional terroir made up of tuff, clay and sand. The climate in Vittoria gives the Nero d’Avola an extraordinary elegance, while the Frapatto is bestowed with a wonderful finesse. In 2000, COS decided to implement biodynamism in the cultivation of its vineyard, with the goal of obtaining the purest wine possible. Frappato 2020 is made from 15-year-old vines in the Vittora production area in south-eastern Sicily, cultivated through organic farming. There, the soil is red due to influence from sand and silt.

Winemaking and ageing

After the harvests at the end of September and the beginning of October, the berries are taken to the cellar to begin a natural vinification process. During fermentation, grapes with skins intact and native yeasts are used. The wine then ages in vats, followed by in bottle.
