Description
A fresh and elegant Saint-Emilion wine
The estate
In 2014, Sylvie Cazes and her children acquired Chateau Chauvin. Continuing the work carried out by the Ondet family, the Cazes family has put all their energy and viticultural experience into this Saint-Emilion Grand Cru Classe. Since the 2014 vintage, Chateau Chauvin has been graced with a new label, inspired by the one first published in 1929, whose design seduced Sylvie Cazes. Cupid, the god of love, is thus portrayed, along with the iconic lion of Saint-Emilion. This label pays tribute to the symbolism of Chateau Chauvin, meaning "to be in love with one's land".
The vineyard
Chateau Chauvin 2021 is a Saint-Emilion wine that stems from a 15-hectare vineyard located to the north-west of the commune. The estate enjoys an exceptional location between Chateau Cheval Blanc and the Butte de Roi. The vines are 30 years old on average and are planted on sandy-clay soils with a considerable proportion of iron ore on clay subsoils. The Chateau Chauvin vineyard has earned the HVE level 3 certification (High Environmental Value).
The vintage
A mild, wet winter preceded a relatively cold spring. Although flowering was uniform and rapid between the 3rd and the 7th of June, heavy rainfall for several weeks delayed the development of the grapes. The milder summer conditions favored a slow and even ripening process. The coolness of the beginning of September gave way to sunny days which ensured a pleasant aromatic and tannic concentration.
Vinification and aging
Harvested by hand in crates, the grapes are rigorously sorted in the vineyard and double sorted in the cellar. Cold maceration for 2 to 5 days at a temperature of 8 degrees. Fermentation then takes place in temperature-controlled stainless steel vats (alcoholic) and then in barrels (malolactic). Vatting is carried out over a period of 20 to 30 days with a gentle and slow extraction. Lastly, the wine is aged in 60% new French oak barrels for 15 to 18 months.
